Give the definition of corrosion and rancidity with an example.

Corrosion is the deterioration of metals by the reaction of water and oxygen with the formation of an oxide layer on the metal surface. An example of corrosion is rusting. Rancidity is where the food becomes undesirable. An example of rancidity is the exposure of chips packet to air which changes the odor and taste.

Corrosion

  • It happens naturally.
  • It is the process by which metals gradually deteriorate as a result of the reaction between oxygen and water, which results in the formation of an oxide layer on the metal’s surface.
  • Pure metal corrodes and changes into an undesirable material.
  • Rusting refers to the process in the case of iron.
  • Rust develops over time when the iron is exposed to damp air. It is a drab, brittle brown substance. (Fe2O3.xH2O).
  • Rusting of iron is the process through which rust develops on its surface.
  • Chemical reaction: Fe2O3 + xH2O → Fe2O3.xH2O

Rancidity

  • The term
    ancidity refers to a state in which food has turned bad.
  • It is frequently used to describe the amount of oxygen in oils.
  • It is a phrase used to describe food that has been harmed by oxygen.
  • It is not advised to eat the meal since the regular structure of the food is changed when oxygen molecules contact the oil and food, changing the flavour and odour.

For instance, a chips packet exposed to ambient air will change in taste and odour, which is an example of rancidity.
